I’ve tried the oven method, the gas range method, and I’ve tried the potato skin, salt, and oil method. So the Skeppshult pans kept seasoning quite well indeed considering I didn’t have any seasoning routines and just washed and dried them after use. The 9 1/2" (6 1/2" cooking surface) is a little small, except for a single burger, sandwich, or two egg omelette. I do own a Matfer Bourgeat carbon steel pan in 22 cm in my own collection, but I cook on gas and a very little 22 cm Matfer only has an effective cooking area of 12-13 cm, so it’s not likely to warp on any cooking surface.

Considering all the benefits, it’s a wonder why every home kitchen in America doesn’t have at least one carbon steel skillet. While they won’t replace your other beloved pots and pans, carbon steel pans are a great stand-in for cast iron and are much more durable than nonstick cookware. I am not afraid to scrub with detergent again and get the non-stick back through use, I might try using salt instead if this becomes a thing. As an aside, I also learned that I don’t love the Matfer’s design—I want more cooking space, and I’d prefer the sides to be more upright and less sloped. The build quality feels extremely solid and with a 3 mm thick base, the pan will probably never warp or become dented.The pans are, as mentioned before, oven safe for an unlimited time and can even be used over open fire. Overall, the issues are very minor and the Matfer carbon steel pan is really fun and rewarding to use. Featuring curved interior walls to promote movement and ease of serving, the 10” chef skillet has a larger surface than our popular 8”, encouraging you to cook bigger omelets, sauté more veggies, or sear an extra steak. As I was contemplating this, I remembered a similar thing happening to a newly seasoned cast iron pan. It seems the older Matfers would have had a rather straight bottom then and it was a bit warp prone. The pan also cooled off a lot faster, hence giving precise control when making the pan-fried fish where I wanted to start off with high heat, but then lower it to let the fish cook through.

To lower the risk of warping, the new pans will have a base that bows slightly upward; they will also have a thermally treated anti-corrosion handle stamped with the brand’s logo that is welded on more smoothly for durability. The thinner and legged Ilsa appears faster in use and has seemed able to replenish heat faster, with “good enough” improvement in evennes. I then scrubbed off the thin anti-rust wax layer using running hot tap water and detergent until it didn't feel waxy/sticky inside AND outside - and the handle too. What’s more, the pan is currently getting an upgrade to improve upon its design and make it even more durable.

One thing I love is how the handle is attached: by being a separate bit of metal it doesn't heat nearly as fast so remains cool enough to hold with my hands well into cooking (though not if its been in the oven). Though the reformulation hasn’t been advertised, Christian Letourneau, head of community at Matfer Bourgeat USA, confirmed that the brand has indeed made “a few small tweaks to this particular product in response to chef feedback, as well as the pan’s growing popularity among in-the-know home kitchens in the U. Now they are nice and smoooooth though and a pleasure to use with metal utensils, but I will probably oil them a bit more often after use now.

A legacy French kitchen brand, Matfer Bourgeat has been outfitting restaurants, culinary schools, luxury hotels and catering services with their cookware—which includes copper, stainless steel, nonstick, cast iron and ceramic—for over two centuries. However, they have some extra benefits in their favor, namely the fact that they’re far lighter in weight so they’re more responsive to heat and easier to handle, and the smoother surface is easier to season and keep nonstick. So I would defintely say the thickness played a role in how easily the pan warped - but I’m not sure it’s the only reason. Then I have a thicker and larger Kinghoff 6 mm, 23,5cm, this one enables me to use my 28 cm Skeppshult frypan with the pancakes. Though the brand’s recommended seasoning process was a bit tedious, I appreciated how specific it was—and most importantly, it was successful.
